Hello! I’m Madeline
A Registered Dietitian Nutritionist (RDN) and Licensed Dietitian Nutritionist (LDN) with a Master of Science in Dietetics (MS).
I’m a Registered/Licensed Dietitian Nutritionist, plant-based expert, and founder of Planta Nutrition Rx.
I currently live in Naperville, Illinois with my husband and our dog, a goldendoodle named Kiwi. Of course she needed a fruit name! I was born and raised in the beautiful Caribbean Island of Puerto Rico. It is here where I grew up eating delicious plates such as “Arroz con gandules,” “Mofongo,” and “Pastelon,” among other wonderful dishes my mom cooked for the whole family. It was in my teenage years in PR that I developed a big passion for cooking and trying new foods and recipes.
Before my career in nutrition and dietetics I completed an undergraduate dual degree in Industrial Chemical Process and Chemical Engineering Technology at the University of Puerto Rico in Arecibo. After working for almost three years in a medical device industry, I noticed something was missing and needed to do more. I decided to do some research and found the most incredible career, Nutrition and Dietetics. After taking some nutrition courses at different universities, I completed a post-bachelor’s degree/certificate in Nutrition and Dietetics at Dominican University in River Forest, IL. In the cold and beautiful state of Illinois I also completed my Master of Science in Dietetics with Dietetic Internship at Loyola University Chicago.
My experiences working with the community as a Bilingual Oncology Dietitian in Wellness House, Bilingual Community Nutrition Liaison in COVID Equity Response Collaborative at Loyola (CERCL), Bilingual Telehealth Dietitian Nutritionist, intern and volunteering in the Proviso Partners for Health – VeggieRx program, and in the Loyola Community Nursing Center (LCNC), has developed my highly skilled passion for working within the community. I also serve as the Social Media Chair for the Academy of Nutrition and Dietetics Vegetarian Nutrition dietetic practice group.
My favorite foods are dark chocolate, berries, rice, and plantains. I love traveling to Puerto Rico to spend time with my family and enjoy the sunset on the beach and nature.
